Minty Watermelon Breakfast Bowl

Watermelon is a juicy hit for most kids. Served over coconut chia mousse, it makes for a perfect protein-and-fat breakfast bowl, introducing your little one to the flavor of mint. Adults will love this juicy, refreshing, and summery combination, too! Try offering watermelon in different cuts, such as ruler-thick slices, for your baby to practice grabbing and picking up. Makes about 2 cups

1 cup finely diced seedless watermelon

1 teaspoon minced fresh mint

½ teaspoon fresh lemon juice

¼ teaspoon olive oil

1 cup Chia Seed Mousse (this page)

In a small bowl, combine the watermelon, mint, lemon juice, and olive oil. Stir, and serve over chia seed mousse.

Storage: Keep in an airtight glass container in the refrigerator for up to 3 days.

Tip: You could serve this over Homemade Yogurt (this page) or store-bought, full-fat, plain yogurt instead of coconut chia seed mousse.
